Think apples, citrus, peach, apricot - so much action in the glass for a level entry. The freshness will remain for the first 5 years with more spicy characters evolving over time. In terms of food pairing: Asparagus, sweet water fish, sushi, fish and chips, schnitzel. I would have gone spicy Asian but we were told nothing heavily spicy
